You did us proud. The bass was delicious , just coagulated and cooked to perfection with a gentle sauce that didn’t overwhelm the fish.
Chicken also excellent, moist and tender, delicious gratin dauphinoise and very sophisticated savoy parcels.
Did you cook or start any of it in a sous vide?
Together with good wines and good company we thoroughly enjoyed it . Thanks ++
