Tomato, coriander and cumin salad
Plenty for 8 people
750g firm but ripe tomatoes
1 tbs cumin seeds
2 – 3 tbs chopped fresh coriander
1 tbs lemon juice
3 tbs sunflower oil
salt to taste.
- Cut the tomatoes in half – then cut each half into 4 (cubes rather than slices)
- Place in a bowl with any juice they release
- In a small saucepan warm the sunflower oil, add the cumin seeds and as soon as they begin to “jump” pour over the tomatoes
- Add the remainder of the ingredients and mix gently.
This salad can be eaten immediately – it will keep for 4 days in the fridge.
You can add cucumber and or spring onions to this too.
