Pickling Spice Mix

Try making your own pickling spice blend.
Below is a suggestion to get you started:

2 tbsp. mustard seed
1 tbsp. whole allspice
2 tsp. coriander seeds
4 whole cloves
1 tsp. ground ginger
1 tsp. dried red pepper flakes
1 bay leaf, crumbled
1 5cm cinnamon stick, broken up
2 blades of mace, crumbled

It is best to make this as you need it. As with all spices, the longer you store them the more they lose their flavour and aromas. If you are going to store them it is best in an airtight container, in a cool place and away from light.
