Young Leaf Salad

This is a delicious and healthy dish to accompany pasta dishes, roast chicken, barbeues (dare I mention them), cheeses, cold meats, pates and much more.

If you grow herbs, many of them are delicious in salads, just snap their stems to pick, the younger the leaves the more tender.

Young leaf salad
Various combinations suggested.

All of these can be mixed with leaves of baby gems, oakleaf, cos, or your favourite lettuce for the base.

Combo 1
(for garlic lovers)

  • Ramson leaves
  • Ramson flowers
  • Sorrel leaves (small ones only)
  • Baby spinach leaves
  • Fennel (this should be growing now, just a few sprigs, broken up)

Combo 2
(Peppery lovers)

  • Rocket
  • Watercress
  • Parsley
  • Tarragon (scant amount)
  • Lovage (scant amount)

Combo 3
(Fragrant lovers)

  • Fennel
  • Dill
  • Mints
  • Ramson flowers
  • Chive flowers
  • Basil
  • Coriander
  • Chervil

When experimenting, you can add carrot thinnings, beet thinnings,  beet leaves, spring onion thinnings, endives, any herb you like the taste of, nasturtium leaves, young lovage stalks chopped, chives, barage leaves and flowers, green coriander seeds (very peppery and crunchy) etc etc……….

Dress the salad just before serving, or serve dressing seperately.
