Savoy Cabbage

- Bring a pan of water to the boil with a pinch of salt and a slice of lemon or orange.
- Shred cabbage evenly.
- Melt a little butter, grate some pepper and nutmeg into the butter. You can add some grated orange zest to this mixture. Use a saucepan large enough to accommodate the cooked cabbage.
- Boil cabbage in water when it comes up to the boil, 2 – 4 minutes depending on how well you like it cooked.
- Drain well.
- Toss in the melted butter mixture.
